How much food do I need to serve 140 people at a wedding reception buffet?

My caterer said to take the guests you have and figure 1.5 servings for each. So 225 servings for 150 guests. Like 225 sandwiches, 225 servings of potato salad, etc.
I'd figure a pound of potato salad would feed 6-8 people so you'd need about 28-38 lbs of salad, about 60 lbs of meat since that serves about 4 people per pound. Same for chicken breast. About 20-30 lbs of cheese.
